Gluten Free Apple Pie

OK, I’ve never made a pie from scratch.  But why not just go for it and make it gluten free?  I searched recipes and wasn’t too sure, so I did what I usually do… combined what sounded good and made it up while I put it together.  Before I post it, I’m going to make it again for Thanksgiving.  I’d hate to post a recipe that wasn’t right.  And, no, I’m not entirely sure what I did, but I did try to write it down after baking…because it came out amazing!  Yum!!!  And I don’t usually like pies.  Which brings me to why I made it, the leftovers from apple picking.  We had to many to eat by themselves, so I cored and peeled apples and used Pamela’s gluten free baking mix.  And, it was a success with my girls and husband, and myself.  Especially because we went all out and served it with vanilla ice cream.  Just looking at this is making me hungry again.  I should update this after Thanksgiving with the recipe.

I also bought caramels and we melted them with butter and dipped the apples in them.  (I bought sticks in the produce aisle of the grocery store).  I DO NOT recommend this.  They were way too hard to really enjoy.
